1 tube of bought puff pastry, defrosted.
1 carrot
2 small aubergines
A handful of baby corn
A handful of cherry tomatoes
1 tbsp honey balsamic vinegar dressing
200g bacon
1 egg, lightly beaten
Directions
- Wash and thinly slice the veggies. Spread on a baking tray and drizzle over the dressing. Roast for 20 minutes at 190C.
- Meanwhile, cook the bacon until lightly browned. Don’t overcook, otherwise it will burn in the final bake.
- Roll out the defrosted pastry onto a baking sheet, that is lined with baking paper. Place the roasted veggies and bacon in the middle of the pastry, leaving about 1.5 inches around the edge. Roughly fold up the edges of the pastry, tucking any veggies into areas where there aren’t any. Brush the edges of the pastry with a beaten egg wash and then bake for 20 minutes until golden brown. Serve hot with piles of crisp green salad.
