Brown’s quick baked salad

INGREDIENTS
Leafy greens – use mustard greens
purple lettuce
radicchio
cabbage
spinach or kale
Directions
- Make a quick red wine vinaigrette and toss with the greens.
- Pile the salad on an ovenproof dish, and top with Brown’s goat’s gouda cheese and feta.
- Bake until the grill until the cheese has just melted.
- Finish with roasted cashew nuts and a drizzle of balsamic vinegar, and serve straight away.
