hourThis fabulous recipe comes to us from Kavita at Kook Food who we can safely say knows how to create a super spooky but delicious icebox cake!! It’s just perfect for Hallowe’en!!
INGREDIENTS
1 Brown’s Vanilla ice cream
1 Brown’s Chocolate ice cream
3 packets 158g Oreo Biscuits
500ml whipping cream
2 tablespoons cocoa powder
1 tablespoon icing sugar
Fondant and chocolate chips for decoration
Directions
- Remove ice cream from fridge to allow to soften. In a spring form round baking tin, place a layer of Oreo biscuits and pour chocolate ice cream over.
Place another layer of Oreo biscuits and pour vanilla ice cream over followed by a final layer of biscuits.
Place in the freezer for at least an hour or until frozen. - Whip cream with cocoa powder, icing sugar and refrigerate until use. Remove baking tin from freezer and gently remove cake.
Frost with whipping cream and freeze for a further 15 – 20 minutes. - Meanwhile assemble the Oreo bats. Split the Oreo biscuits in half and use the side without cream for the wings by cutting in half with a knife.
Roll out fondant and cut circles for the eyes and triangles for the teeth. Stick wings behind side with cream, place eyes and use chocolate chips on top as pupils. - Place bats on top of ice cream cake and serve immediately, remember to work fast as ice cream cakes melt quick! Enjoy!
