Cauliflower and cheese tots

INGREDIENTS

2 tblsp cream
2 tblsp butter
450g cauliflower
2 egg yolks
100g grated cheddar
1 tsp baking powder
4 egg whites
Ketchup to serve 

METHOD

Melt butter and mix in cream. Place cooked cauliflower into a food processor with the cream and butter, blend until fine. Allow to cool. Once it’s cold stir in the yolks, cheese and baking powder. White egg whites until stiff. Fold 1/4 egg whites into the mix followed by the rest. Use two teaspoons to scoop and scrape spoonfuls if the mix into a lined baking tray. Make them about 3cm long. Bake for 15-20 mins in a 180 degree oven, until golden.
