Cauliflower and cheese tots

INGREDIENTS

  • 2 tblsp cream

  • 2 tblsp butter

  • 450g cauliflower

  • 2 egg yolks

  • 100g grated cheddar

  • 1 tsp baking powder

  • 4 egg whites

  • Ketchup to serve 

Directions

  • Melt butter and mix in cream. Place cooked cauliflower into a food processor with the cream and butter, blend until fine.
    Allow to cool.
  • Once it’s cold stir in the yolks, cheese and baking powder. White egg whites until stiff.
    Fold 1/4 egg whites into the mix followed by the rest. 
  • Use two teaspoons to scoop and scrape spoonfuls if the mix into a lined baking tray. Make them about 3cm long.
    Bake for 15-20 mins in a 180 degree oven, until golden.
