Course: Recipes, MainAdding chia seeds to salad dressing is a stroke of genius. It thickens the dressing up and also serves to provide you with a little power-packed punch of omega. Yummy!
When we started working with the genius couple at Ol Kerii, we knew we were onto something. The products are all grown organically in the Nguruman Hills south of Nairobi. It’s an area where a lot of the community wouldn’t otherwise have an income source, so Katy and Philip Leakey are definitely key players! One of my favorite discoveries over the past couple of years has been their organic chia seeds. I feel so happy putting these into (almost everything) my body! Chia gets thrown into bread, cakes, smoothies, cereals, porridge, ice lollies, and anything else you can think of. The clever thing about chia is that they don’t disrupt flavor, and when you know that they add important plant-based omegas to your diet, what’s not to like?!
Katy kindly sent me this recipe for a thickened white chia salad dressing, and I’d recommend you give it a whirl! Delicious on a green salad or a more colorful mixed number too. Enjoy!
INGREDIENTS
1 tsp Olkerii acacia honey
1 1/2 tsp mustard
1 tbsp Olkerii white chia seeds
1 tbsp Olkerii fresh peeled shallots
1 – 2 tbsp apple cider vinegar
2 – 3 tbsp olive oil
Salt and pepper to taste
Directions
- Mix the honey, mustard, and seeds into a paste.Â
- Then add a tbsp of Olkerii fresh peeled shallots (put through the garlic press first for a smoother consistency).Â
- Add in the vinegar, olive oil, and salt and pepper.
- Set aside to thicken up for 15 minutes or so as you put together the rest of your salad.
