Christmassy Mulled Wine
Course: Recipes, Christmas, TreatCome Christmas, there’s nothing better than having a glass of warm mulled wine thrust into your hands as you merrily sway your way into another fabulous party!! As the rosy glow of red wine starts to emerge on laughing cheeks, you can thank mulled wine.
This recipe is originally adapted from Jamie Oliver, who we think is a total hero!
INGREDIENTS
2 pixies, or if not then try tangerines
1 lemon
1 lime
200g caster sugar
6 whole cloves
1 cinnamon stick
1 bay leaf
10 gratings of nutmeg
2 bottles of red wine
2 star anise
Directions
- Start by peeling large sections of peel from the pixies, as well as the lime and lemon. Drop these into a saucepan and add the sugar.
- Squeeze in the juice of the pixies. Add all the spices, and then pour on enough wine just to cover the sugar.
- Turn on the heat and simmer until all the sugar dissolves.
Turn up the heat and let it boil for about 5 minutes to turn into a bit of a syrup, which will be fully imbued with all the spicy flavours. - Lastly add the rest of the wine and star anise, and bring up to warm, but drinkable temperature.
Serve with rosy cheeks and plenty of cheer!
