INGREDIENTS

  • 60g coconut flour (or any you prefer)

  • 2 eggs, whisked

  • 80g desiccated coconut

  • Coconut oil for frying

  • 2 chicken breast fillets sliced into 1cm strips

Directions

  • Place the flour, whisked eggs and desiccated coconut in three separate bowls. 
  • Dip the chicken strips into the flour, followed by the eggs, followed by the desiccated coconut. 
  • Heat the oil in a frying pan and fry until golden.
    Serve with salad and some homemade mayo.
