60g coconut flour (or any you prefer)
2 eggs, whisked
80g desiccated coconut
Coconut oil for frying
2 chicken breast fillets sliced into 1cm strips
Place the flour, whisked eggs and desiccated coconut in three separate bowls.
Dip the chicken strips into the flour, followed by the eggs, followed by the desiccated coconut.
Heat the oil in a frying pan and fry until golden. Serve with salad and some homemade mayo.
