Coconut Chicken Strips

60g coconut flour (or any you prefer)
2 eggs, whisked
80g desiccated coconut
Coconut oil for frying
2 chicken breast fillets sliced into 1cm strips
Directions
- Place the flour, whisked eggs and desiccated coconut in three separate bowls.Â
- Dip the chicken strips into the flour, followed by the eggs, followed by the desiccated coconut.Â
- Heat the oil in a frying pan and fry until golden.
Serve with salad and some homemade mayo.
