We collaborated with the brilliant Rohan Patel (@cookandcanon), Jaya Patel (@thelittle_nutritionist) and Freshly Kenya (@freshlykenya) for this recipe to celebrate Earth Day on 22nd April.


  • 1 1/2 cans of coconut milk

  • 1 cups of water

  • 1 cup Thai jasmine rice

  • 1 tsp cardamom powder

  • 3 tsp brown sugar

  • Fresh mango, sliced

  • Dried mango / pomegranate arils to garnish (optional)


  • Mix coconut milk, water, rice, cardamom and brown sugar in a saucepan and stir well. Place on a high heat and stir continuously until the milk has come to the boil. Lower the heat and cook for another 30 – 40 minutes stirring from time to time, until the rice is cooked through. Depending on the consistency of rice pudding that you like, you may want to add more water / coconut milk as it is cooking, for a looser finish. Serve the pudding hot or cold, and top with your garnishes.
