It’s the Easter holidays for us – as of today – which means we have one. whole. month. to endure chat about that bunny. At Leapfrog, where Saskia & Bertie go to school, we all take in a plate of food for the last day. And these chocolatey little mouthfuls, destined to cause sugar highs and subsequent lows (but nevermind, we’ll all be home by then), are what the kids chose to make for their friends. They were super fun to put together – and so easy – we melted all ingredients except the cornflakes, and then let it all cool for a minute before adding the flakes and letting the kids get stuck in with their hands, shaping small balls of the mixture into the cupcake cases. Make a nest by pressing your thumb into the middle, and then fill with whatever goodies you can get your hands on!
450g dark chocolate
4 tbsp golden syrup
100g Brown’s unsalted butter
Confini jelly babies / mini eggs etc to fill
Melt the chocolate, butter and syrup in a bowl suspended above a sufuria of boiling water. Make sure the water doesn’t touch the bowl. Once it’s all melted and smooth, allow to cool before pouring over the cornflakes and stirring gently to ensure all the flakes have a nice covering of chocolate. Shape into balls and put into cupcake cases, and finally make an indent with your thumb. Cool in the fridge. Fill with goodies and stuff your faces!!
