  • 345g plain flour 

  • 45g corn starch

  • 1  ½  tsp baking powder 

  • ½ tsp salt 

  • 150g caster sugar 

  • 120g salted butter 

  • 150ml milk 

  • 2tsp ground flax seeds 

  • 2tsp vanilla 

  • 40g of cranberries 


  • Preheat your oven at 190°C.  
  • Melt butter over low heat.
  • Remove from heat and add all the wet ingredients and flax seeds. Leave to cool for 15 minutes. 
  • In the meantime add mix all of the dry ingredients in a bowl and add in the wet ingredients.
  •  Mix with a fork to avoid over kneading.
  • It should be slightly sticky then add the cranberries and mix.
  • Take half of the mixture out and shape into a log roughly 20 cm by 10cm by 3 cm it should be a smooth top.
  • Repeat for the other half.
  •  Bake for 25 min till golden brown then remove to cool.
  •  After 15 minutes cut the slab into 2 cm thick pieces at an angle. Reduce the temperature to 160 °C 
  • Transfer these pieces to the baking tray and bake for 30 minutes flipping halfway.
  • Transfer to a wire rack to cool completely.
