Flowery Foccacia

This flowery foccacia is a really fun thing to do at home, with the family or just on your own – turning art into food!

 

INGREDIENTS

400g flour (I use 300g plain white and 100g brown wheatflour)
1 tsp salt
325ml tepid water
1 tsp active dry yeast
1 tblsp sugar
2 tblsp olive oil

 

METHOD

Mix flour and salt in one bowl. In a measuring jug, measure your tepid water, add the sugar, yeast and oil and allow to sit for five minutes to activate the yeast. Pour the water mix into the flour and bring together with a fork. If it seems too wet, add a little flour, but not too much. Bring together into a lovely soft elastic dough and knead for 5 minutes until it’s looking smooth. Put into a slightly oiled bowl and set aside to rise for approx 30 – 40 minutes or until doubled in size.

Bring it out of the bowl and knock it back. Roll it with a rolling pin into a rectangular shape and put into a baking tray to rise again – another 30 minutes or so in a warm place. During this time, prepare your toppings (suggestions below).

Once risen, lightly brush the surface with olive oil, then decorate, gently pushing some of the vegetables or fruit into the dough so that it stays in place. The oil will also help with that. Make sure the oven is on whilst you’re doing this – 190C. Once decorated, lightly dab with olive oil (dabbing instead of brushing so you don’t mess up your design!) and then put into your preheated oven to cook for approx 25 minutes. When it’s lovely and golden on the top, give it a light tap to see if it sounds hollow. If it does, it’s ready. Allow to cool in the baking tin. Serve with olive oil!

Grapes
Blueberries
Candied peel
Strawberries
Raspberries
Chocolate
Demerara sugar
Stone fruit cut up (cherries, peaches, nectarines)
