Handful of green beans
2 tbsp chopped red onions
1 tblsp apple cider vinegar
2 tblsp olive oil
1/2 tsp honey
Chopped basil
1/3 cup crumbled feta
2 tbsp toasted walnut pieces
Freshly ground black pepper
Directions
- Place the chopped onions in a bowl of cold water to reduce their acidity slightly, let them sit there until the rest of the salad is ready.
- Blanch the green beans in roiling hot water, and then shock them in ice cold water to keep their beautiful green colour.Â
- Make a little dressing with the apple cider vinegar, olive oil and honey. Mix with the green beans, sprinkle in the chopped basil, the feta and the walnuts, and season with a good grind of black pepper.Â
