• 1 cucumber, quartered
  

• 3 carrots, ribboned with a peeler
  

• 1 tin grilled aubergine
  

• 1 tin sun-dried tomatoes
  

• 1 pomegranate
  

• Microgreens

• For the Maple Mustard Dressing
  

• 1/4 cup maple syrup
  

• 1/4 cup dijon mustard
  

• 1 tsp garlic, grated
  
  

• 1/4 tsp salt
  

• 1/4 tsp pepper
