Homemade Digestives

125g oats
125g butter – I used a mix of nut butter and unsalted butter
50g jaggery
2 tblsp milk
125g wholewheat flour
pinch of salt (optional)
Directions
- These are most easily made with a food processor. Chuck the oats in and blitz them until not quite fine, but a coarse flour. Add the butter and blitz.
- Dissolve the jaggery in milk (I used the microwave to warm up the milk which made it easier to dissolve the sugar). Pour in the jaggery mix and blitz.
- Finally add the flour and a pinch of salt. Pull together and allow to rest in the fridge for 20 minutes. Heat your oven to 180 degrees.Â
- Remove the biscuit mix and roll out with a rolling pin. Cut into shapes, place on greasproof paper / a well oiled baking sheet / silicone baking sheet, and bake for 20 minutes or until golden.
