Ingredients
1kg chicken thighs or wings
Rice vinegar
3 cloves garlic, minced
2 tablespoons of minced ginger
Salt and pepper
Mirin
- For the sauce
1/4 cup ketchup
1/4 cup gochujang (Korean chili paste)
1/4 cup honey
1/2 cup mirin
1 tbsp minced garlic
1 cup of water
Chili flakes
- For the breading mixture
1 cup all-purpose flour
1 cup corn flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon onion powder
1 teaspoon black pepper
Vodka (optional)
- Garnish
Spring onions
Sesame seeds
Directions
- Marinate your chicken with rice vinegar, minced garlic, minced ginger, a touch of mirin, salt, and pepper, and let it rest. Meanwhile, prepare your sauce. In a pan, add your gochujang paste, ketchup, brown sugar, honey, mirin, minced garlic and ginger, chili flakes, and a cup of water. Cook over medium heat, stirring constantly, until the sauce thickens and becomes glossy about 5 minutes.
- In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, onion powder, and baking powder. In another bowl, mix together the cold water and flour or optionally, you could use cold water and vodka.
- Â Pat your chicken pieces dry. Dip each chicken piece into the flour mixture, shaking off any excess. Then dip it into the vodka mixture, allowing any excess to drip off. Finally, dip it back into the flour mixture, shaking off any excess. Fry in hot oil (175c) for 10-12 minutes in batches. Repeat the same process for all your chicken pieces. Fry the chicken pieces until they are golden brown and crispy, about 10-12 minutes per batch. Drain on paper towels.
- Toss the fried chicken wings with the sauce until they are fully coated. Garnish with thinly sliced green onions, if desired, and sesame seeds
