55g oats (little over 3/4 cup) blended
20g of almonds blended (around 17 pieces)
20g of cocoa powder (2 heaped tablespoons)
1/4 tsp ground cinnamon
2 tbsp of coconut oil
3 tbsp of maple syrup (sub agave if you prefer)
4tbsp of biscoff spread
Directions
- First line a cupcake tray with a little coconut oil. Silicone moulds are the best but it does work with a regular tray. Blend the oats and almonds till they are fine.
- Transfer to a bowl and add in the remaining ingredients (minus the biscoff), mix till you are able to mould it into balls.
- Take a little of the mixture roll it in your hand and flatten into a disc. Place this disc into your cupcake mould and press into the sides and bottom, place in the freezer for 10 minutes . While it’s setting melt the biscoff spread in the microwave for 30 seconds.
- Pour mixture into cases and let it set for 10 minutes in the fridge. If you do not have a sweet tooth add less of the spread. (Option to add some melted. chocolate or pieces of biscoff biscuits). If using a silicone mould then they will pop right out otherwise take a butter knife and slowly go round the edges and it will slowly come out without sticking.
