At the request of one of their great friends, this alpine Emmental style cheese was created by Delia and Andy at Brown’s Cheese. It is a yellow, medium-hard Swiss cheese that originated in the area around Emmental, in the canton of Bern, Switzerland.. It has a savoury but mild taste. It is made using special propionic bacteria which create the signature holes in the cheese.
