Cheddar is traditionally a hard English cheese which is close and firm in texture mellow in character or quality and rich with a tendency to melt in the mouth. This cheese is wrapped in cloth and coated in vegetable oil to allow mould to develop creating a much sharper cheddar than a natural rind cheddar.
