WINEMAKER’S NOTES
The grapes are pressed in a pneumatic press as soon as they arrive at the cellar, without any prior maceration. They are then left to settle cold, followed by low-temperature alcoholic fermentation in stainless steel vats to extract the fruit aromas as much as possible. This wine is aged in thermo-regulated stainless-steel vats before being early bottled in order to preserve all the freshness of the wine.aromas. The wine benefits from a light fining and is bottled the following spring to keep its liveliness.
