The Regional Selections represent vineyard & varietal combinations which are recognised for excellence. The motivation is quality, and the result is a range of wines which are hand-made from specific vineyards to bring you the best of each growing region. Fruit for our Cabernet Sauvignon was sourced from the Williams family vineyard located in southern Coonawarra, an area long renowned for producing some of Australia’s most famous, and longest-living wines. Following picking in the second week of April 2015 fruit was closed-top fermented with time on skins varying between 8-15 days. Post ferment, majority of the blend was treated to 16 months oak maturation in second-fill French oak Barriques and Hogsheads where malolactic fermentation also took place.
Appearance: Dense ruby red with purple flecks.
Aroma: Bold Cabernet aromas of mulberry, black forest cake and rich chocolate.
.Palate: Cassis, dark chocolate, toasted cedar and a lick of herbaceous interest flow through this wine. There is no denying this is Coonawarra Cabernet with very strong regional and varietal note – firm tannins lead into a beautiful lingering finish.
Summary: A rich and generous style of Cabernet which is drinking lovely in its youth but will also age gracefully in the medium term.
