PROFILE
Vineyards are located at high altitude (400 – 600m). Harvest is by hand, using small cases of 15kg. Upon arrival at the winery, the grapes are de-stemmed and gently crushed followed by pre-fermentative maceration at a low temperature for 12 – 24 hours. The grapes are then pressed and fermentation takes place at a controlled temperature of 14 – 16 C.
