Rolled Shoulder of Lamb is a perfect roasting cut with ample but not excessive amounts of fat to keep the meat tender and flavoured throughout the roasting process. Well Hung Butcher lamb is sourced from Lolomarik Farm where Dorper and Charolais lamb are reared on a selection of grasses of legumes bringing a luscious flavour to the meat which is aged for 5 days after being butchered to further enhance the flavour profile.
