This triangular cut comes from the top of the rump region of the cow and just like our rumps (!) it has a beautiful layer of fat. It’s not a muscle that moves much during the animal’s life so it remains tender. The layer of fat lends the meat flavour and juiciness perfect for grilling. The Well Hung Butcher’s succulent beef is termed Conservation Beef on account of coming from beef that lives in harmony with wildlife and gives conservancy areas another form of income – which in turn assists with the running costs of looking after wildlife. WHB beef comes from healthy happy grass-fed Boran beef raised on ranches in Northern Kenya, with plenty of space to roam.
