This super healthy bowl of rainbow veg + quinoa is a fast track to feeling great! The vegetables 🥒 can be swapped for almost anything – and because most ingredients are raw, it’s super easy to prepare. Sweet potato 🍠 , butternut, beetroot, or other greens would go wonderfully in this recipe. You can also add tofu or tempeh if you like. 


  • 1/3 cup quinoa

  • ½ a cucumber, or 1 head of broccoli, steamed

  • A handful of sugar snaps, sliced

  • Olive oil spray

  • 1 cup shredded purple cabbage

  • 1 avocado

  • 1 cup cherry tomatoes

  • 2  teaspoons sesame seeds

  • 1/4 cup Lemon Tahini Dressing

  • For the Lemon Tahini Dressing
  • 1/4 cup tahini

  • 1/3 cup water

  • 1 lemon juiced

  • 1 garlic clove minced

  • 1/4 teaspoon salt

  • 1/8 teaspoon pepper


  •  Place the quinoa in a small saucepan with ¾ cup of cold water, and bring to the boil. Cover and reduce the heat, and allow to simmer for 15 minutes. If it becomes dry add a splash more water and cover, until all the seeds have ‘opened up’ and it is cooked. Set aside.
  • Cut the cucumber into thin slices.
  • Into two bowls, divide the quinoa. Then divide the cucumber, cabbage, avocado, tomatoes, and sesame seeds, and drizzle over the Lemon Tahini Dressing.
  • Serve immediately, or cover and store for later. This Vegan Bowl is wonderful served either hot or cold.
