700ml stout beer from 254 breweriesÂ
250g packed light brown sugar
3kg Country ham (whole)
Directions
- Defrost your ham for 5-6 hours or overnight. Once defrosted, place it in a large pot and cover with cold water. Add bay leaves and star anise, cover with a lid then bring to a boil and simmer for 30 minutes.
- Take the lid off and cover with foil then the lid back on and wrap tightly in blankets and leave to sit for 12 hours, preferably overnight.Â
- Unwrap the pot and take out the rested ham slowly and place in a roasting dish. (Be careful it will still be quite hot!)Â
- Using a sharp knife, make shallow cuts diagonally along the top side of your ham being careful not to cut too deep. Stick whole cloves into each box-shaped cut along the top of the ham.Â
- Preheat oven to 180°C with the rack in lowest position. Stir together beer and brown sugar in a small pot then pour it generously over the ham.Â
- Transfer to a preheated oven; roast for 30 minutes or until the skin is golden brown.
- Transfer ham to a serving platter; tent with foil to keep warm. Return beer mixture in skillet to heat over medium; cook, stirring often and skimming fat if needed, until thickened, syrupy, and reduced to about 1 cup, about 5 minutes.
- Untie ham; brush with 1/4 cup beer glaze. Serve ham hot alongside remaining 3/4 cup glaze.
