Ingredients
250g soaked dried chickpeas, cooked and a little cooking water saved (60 – 100ml).
60g sun dried tomatoes
2 tbsp olive oil
2 tbsp tahini
Juice of 1 lemon
1 small clove garlic or 1/2 teaspoon garlic paste
1/2 tsp cumin
1/2 tsp smoked paprika
6 – 8 large basil leaves
Salt and black pepper
Directions
- In to a food processor, add chickpeas, sun dried tomatoes, tahini, basil, lemon juice, extra virgin olive oil, smoked paprika, cumin, salt & pepper.
- Turn on the motor and slowly pour in a little leftover chickpea cooking water to smooth out until your desired texture (around 60ml should suffice).
- Test for seasoning and adjust accordingly. Scrape out into a serving bowl and garnish with extra virgin olive oil, smoked paprika and baby basil leaves. Serve at room temp with your edible tools of choice!
