Traditional Tea Cake

We love this very simple cake, and making it more locally relevant, we’ve added in dried fruit which gives it a tropical twist!

Traditional Tea Cake

INGREDIENTS

  • 340g dried fruit – we love using 3/4 dried fruit mix from Sweetunda and 1/4 raisins or cherries

  • 1 cup of cold tea (Earl Grey is yummy)

  • 1 large egg

  • 1/2 cup brown sugar

  • 2 teaspoons baking powder

  • 2 cups all-purpose flour

Directions

  • Soak the dried fruit in the tea, overnight if possible.
  • Stir in the egg and brown sugar. Sift the flour and baking powder together, and add it to the mixture a spoonful at a time, beating all the while so the batter is as smooth as possible.
  • Bake at 160C for 1 hour, or cook until you can smell it!
  • Serve with a generous spread of butter, and a hot cup of tea.
