Traditional Tea Cake
We love this very simple cake, and making it more locally relevant, we’ve added in dried fruit which gives it a tropical twist!

340g dried fruit – we love using 3/4 dried fruit mix from Sweetunda and 1/4 raisins or cherries
1 cup of cold tea (Earl Grey is yummy)
1 large egg
1/2 cup brown sugar
2 teaspoons baking powder
2 cups all-purpose flour
Directions
- Soak the dried fruit in the tea, overnight if possible.
- Stir in the egg and brown sugar. Sift the flour and baking powder together, and add it to the mixture a spoonful at a time, beating all the while so the batter is as smooth as possible.
- Bake at 160C for 1 hour, or cook until you can smell it!
- Serve with a generous spread of butter, and a hot cup of tea.
