Veggie bread

A brilliant one for making bread and making sure you’re getting some extra veggies in at the same time. Inspired by Amelia Freer, this is  also a great bread to make with veggies leftover from the week – substitute the courgette for spinach for instance.

Veggie Bread

INGREDIENTS

  • 4 eggs

  • 2 tsp baking powder

  • 500g grated courgette

  • 375g Twajenga brown wheat flour

  • 3 tbsp olive oil

  • 1 tsp salt

Directions

  • Grease a large loaf tin.
  • Mix all the ingredients together (use a wooden spoon as it gets a little tough!)
  • Bake at 200C for 50 – 60 minutes or until a skewer comes out clean.
  • Toasts well under a grill.
