Veggie bread
A brilliant one for making bread and making sure you’re getting some extra veggies in at the same time. Inspired by Amelia Freer, this is also a great bread to make with veggies leftover from the week – substitute the courgette for spinach for instance.
Veggie Bread

4 eggs
2 tsp baking powder
500g grated courgette
375g Twajenga brown wheat flour
3 tbsp olive oil
1 tsp salt
Directions
- Grease a large loaf tin.
- Mix all the ingredients together (use a wooden spoon as it gets a little tough!)
- Bake at 200C for 50 – 60 minutes or until a skewer comes out clean.
- Toasts well under a grill.
