Ingredients: 1 tbsp olive oil; freshly squeeze juice of one lemon; salt u0026amp; pepper; 4 courgettes – 2 yellow, 2 green; 140g crumbled feta; 1 pink radish; finely sliced soft lettuce leaves; handful of mint leaves; torn up toasted cashew nuts – a handful

Yellow & Green Courgette Salad with Feta

INGREDIENTS

1 tbsp olive oil
freshly squeeze juice of one lemon
salt & pepper
4 courgettes – 2 yellow, 2 green
140g crumbled feta
1 pink radish
finely sliced soft lettuce leaves
handful of mint leaves
torn up toasted cashew nuts – a handful

Directions

Combine the olive oil and lemon juice and give it a shake.
Using a vegetable peeler, cut the courgettes into ribbons. Toss into the dressing for 10 minutes to absorb the flavours.
Start the bowl with soft lettuce leaves, then add on the courgette, feta, lemon zest, mint and some chilli flakes, and top with the chopped toasted cashew nuts and sliced radish.
Drizzle over more olive oil.
