Zero Waste Spelt Sourdough Crackers

Don’t throw away the top of your starter; instead make these fantastic sourdough crackers. We substituted half the butter with olive oil, and it worked really well. Eat with lashings of cream cheese, hummus, baba ganoush or any dip.

INGREDIENTS

  • 1 cup spelt flour

  • 1/2 teaspoon salt

  • 1 cup of sourdough discard (the unfed top bit)

  • 2 tablespoons olive oil

  • 2 tablespoons melted butter

  • 2 tablespoons of freshly chopped rosemary or any other herbs

  • course salt or sesame seeds for sprinkling on top

Directions

  • Sift the spelt flour into a large bowl. Add in the salt, sourdough discard and the oil and butter (you can also make it 4 tblsp butter if you prefer).
  • Mix together into a course dough. Knead a little and then roll into a rectangle and put in the fridge for 30 minutes or longer.
  • When you take it out, set the oven to 180 C, cut the rectangle in half, and roll out as thin as you can between two sheets of parchment paper.
  • On the last roll, sprinkle on the salt or sesame seeds first, then roll them into the dough.
  • Slide onto a baking tray, use a pizza cutter to cut into squares of the size you like.

    Prick each square a couple of times with a fork.
  • Chuck into the oven with a flourish, and allow to bake for around 15 – 20 minutes until golden.
