Beef chuck is a firm and yet chewy cut of meat that comes from the upper part of the ribs, the shoulder, and the neck. Because it comes from these much used muscles, the meat is tough but still full of flavour. It’s perfect for long, slow cooking to soften up and release its flavor. We recommend a beef vegetable soup or a pot roast.
