The juice is treated similarly to Sauvignon Blanc, undergoing cool fermentation with aromatic yeasts for lively aromas and a fresh mineral palate. Early bottling is key to preserving the wine’s natural freshness. Bubbles are added using a cutting-edge, in-line carbonation process.
