The Silverthorn Green Man, 2020

The Green Man, a legendary being part human and part nature, represents the forest’s spirit and the ongoing cycle of life, showing how all living things are connected. This ancient figure has appeared in cultures worldwide, from Babylon to Europe’s cathedrals. Usually depicted as a human face with leaves, he symbolizes the harmony of people and nature.

Today, this idea is seen in Ecology. Winemaker John Loubser was inspired by this concept and the Chardonnay Cap Classique’s soft green color from Silverthorn. Instead of the usual term ‘Blanc de Blancs,’ he named the wine “The Green Man.”

Food pairing: Freshly shucked Namibian oysters – salmon tartar with a zesty lime salsa – Beluga caviar and blini.

Tasting Notes: Well balanced with an elegant structure, fine mousse imparts a gentle explosion of bubbles on the palate and a long finish– fine twirling beads of bubbles. Fresh aromas of green apple and acacia blossom are backed up by subtle hints of minerality and whiffs of freshly baked brioche.
