Ingredients
1 1/2 cans of coconut milk
1 cups of water
1 cup Thai jasmine rice
1 tsp cardamom powder
3 tsp brown sugar
Fresh mango, sliced
Dried mango / pomegranate arils to garnish (optional)
Directions
- Mix coconut milk, water, rice, cardamom and brown sugar in a saucepan and stir well. Place on a high heat and stir continuously until the milk has come to the boil. Lower the heat and cook for another 30 – 40 minutes stirring from time to time, until the rice is cooked through. Depending on the consistency of rice pudding that you like, you may want to add more water / coconut milk as it is cooking, for a looser finish. Serve the pudding hot or cold, and top with your garnishes.
