A Quick Iced Christmas Pudding

INGREDIENTS
2 liters of Delia’s vanilla ice cream, softened (out of the freezer for about half an hour)
600g Christmas fruit mincemeat
60ml brandy or rum
chopped pecans, orange rind strips, chocolate curls, hazelnuts, and dried fruit to decorate
Directions
- Soften the ice cream by beating it for a few minutes.
- Add in the Christmas fruit mincemeat and the alcohol of choice.
- Then put it in a mold and freeze it.
- When ready to serve, dip the mold into hot water and turn out onto a plate.Â
- Decorate with fruit, orange rind, etc as you like. You could also melt the dark chocolate and pour it on top to serve. Yum!
