Blinis for Christmas

100g flour – you can opt for 50% buckwheat if you like a slightly more traditional result
1 egg, separated
150ml milk
25g butter, melted
snipped chives
oil for cooking
Directions
- Sift the flour into a bowl. Add the egg yolk and half the milk, and whisk together until smooth.Â
- Continue to whisk in the milk until you get a nice smooth consistency.
Add in the melted butter, and then the snipped chives. - Whisk up the egg whites until they are pretty much stiff peaks.
Then fold gently into the blini mix. - Heat up a non-stick frying pan, or normal pan and brush with oil.Â
- Dollop teaspoons of the mix onto the pan to cook. Flip them once you start to see little bubbles forming on the surface.Â
- Allow to cool, then we like to use a mix of greek yoghurt and cream to make a type of creme fraiche, top with salmon or smoked trout, and finally some dill.
