Blinis for Christmas

INGREDIENTS

  • 100g flour – you can opt for 50% buckwheat if you like a slightly more traditional result

  • 1 egg, separated

  • 150ml milk

  • 25g butter, melted

  • snipped chives

  • oil for cooking

Directions

  • Sift the flour into a bowl. Add the egg yolk and half the milk, and whisk together until smooth. 
  • Continue to whisk in the milk until you get a nice smooth consistency.
    Add in the melted butter, and then the snipped chives.
  • Whisk up the egg whites until they are pretty much stiff peaks.
    Then fold gently into the blini mix.
  • Heat up a non-stick frying pan, or normal pan and brush with oil. 
  • Dollop teaspoons of the mix onto the pan to cook. Flip them once you start to see little bubbles forming on the surface. 
  • Allow to cool, then we like to use a mix of greek yoghurt and cream to make a type of creme fraiche, top with salmon or smoked trout, and finally some dill.
