Ingredients

  • 100g flour

  • 1/2 tsp baking soda

  • 1/2 tsp sea salt

  • 114g butter

  • 95g brown sugar

  • 60g granulated sugar

  • 1 large egg

  • 2 tbsp mascarpone

  • 2 tsp vanilla extract

  • 135g oats

  • 190g 54% chocolate chips

Directions

  • Heat oven to 180°C.
  • Whisk the flour, baking soda and salt in a small bowl. Mix the butter and both sugars in a large bowl with a wooden spoon until creamy. Beat in the egg until incorporated and add the mascarpone and vanilla.
  • Add the flour mixture and gently stir until no traces of flour remain. Add the oats and chocolate chips and fold until evenly distributed. Loosely scoop a tablespoon and drop onto a prepared sheet. Space all the balls about 2 inches apart.
  • Bake until golden brown for about 15 minutes, cool on the sheet for one minute and then carefully transfer to a wire rack to cool.
  • Enjoy one warm with an ice-cold glass of milk for the ultimate treat!
