100g flour
1/2 tsp baking soda
1/2 tsp sea salt
114g butter
95g brown sugar
60g granulated sugar
1 large egg
2 tbsp mascarpone
2 tsp vanilla extract
135g oats
190g 54% chocolate chips
Directions
- Heat oven to 180°C.
- Whisk the flour, baking soda and salt in a small bowl. Mix the butter and both sugars in a large bowl with a wooden spoon until creamy. Beat in the egg until incorporated and add the mascarpone and vanilla.
- Add the flour mixture and gently stir until no traces of flour remain. Add the oats and chocolate chips and fold until evenly distributed. Loosely scoop a tablespoon and drop onto a prepared sheet. Space all the balls about 2 inches apart.
- Bake until golden brown for about 15 minutes, cool on the sheet for one minute and then carefully transfer to a wire rack to cool.
- Enjoy one warm with an ice-cold glass of milk for the ultimate treat!
