Homemade Poké Bowls
Course: Recipes, MainThe key with this is to be flexible; check what’s in your fridge or veggie rack, and use what’s available. For beauty points, use as many colours as you can.
INGREDIENTS
500g tuna, cut into edible squares
1/4 cup soy sauce
1 tsp vinegar – preferably rice wine vinegar, but if you can’t, use ACV or another vinegar
1.5 tsp sesame oil
3/4 teaspoon chilli flakes
2 – 3 spring onions, chopped
2 spiralized carrots
A handuful of lightly steamed edamame beans or peas
1/2 chopped cucumber
200g cooked brown rice, wild rice, quinoa, pearl barley or couscous
1 tsp black and natural sesame seeds
1 perfect avocado, cut into slices
3 tblsp mayo
1 tblsp sriracha sauce or ketchup
steamed greens – eg broccoli or mange tout
Directions
- First, marinade the tuna for 20 – 30 mins before you want to eat. Mix the marinade using the soy sauce, vinegar, sesame oil and chilli flakes. Set aside whilst you prepare all the other ingredients above.
- Meanwhile also make the drizzle by mixing the mayo with either sriracha sauce (or an alternative chilli sauce) or ketchup (perfect for kids).
- Arrange in the bowl! We start with the rice; then load the veggies and tuna around the side, and finally top with the pink dressing, sesame seeds and chopped spring onions.
