INGREDIENTS

  • 500 grams pork tenderloin

  • 1 bell pepper

  • 2 cloves garlic

  • 1 tbsp ginger

  • 2 tbsp green onions

  • 1/2 pineapple, medium

  • 1 red onion
  • 1.5 tbsp honey

  • 1/4 cup soy sauce, gluten-free

  • 2 tbsp apple cider vinegar

  • 1 cup rice

  • 1/2 tbsp sesame seeds

Directions

  • Defrost pork and cut into bite-sized cubes.
  • Thinly slice bell peppers and carrots.
  • Peel and cut the pineapple into cubes.
  • Heat oil in a wok or large pan over medium-high heat. Add your diced pork and cook until browned about 5-7 minutes.
  • In a separate pot, bring 1 cup of water and a pinch of salt to a boil. Add 1 cup of rice, reduce the heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
  • Once the pork is browned, add the ginger, garlic, and onions to the pan, and sauté for 1-2 minutes until fragrant.

  • Add bell peppers, pineapple cubes, and carrots to the pan, and cook for 5 minutes until the vegetables are tender-crisp.
  • Pour in the sauce and stir well to ensure everything is evenly coated. Remove the pan from the heat.
  • Garnish the stir-fry with chopped green onions and sesame seeds before serving. Enjoy!!
