500 grams pork tenderloin
1 bell pepper
2 cloves garlic
1 tbsp ginger
2 tbsp green onions
1/2 pineapple, medium
- 1 red onion
1.5 tbsp honey
1/4 cup soy sauce, gluten-free
2 tbsp apple cider vinegar
1 cup rice
1/2 tbsp sesame seeds
Directions
- Defrost pork and cut into bite-sized cubes.
- Thinly slice bell peppers and carrots.
- Peel and cut the pineapple into cubes.
- Heat oil in a wok or large pan over medium-high heat. Add your diced pork and cook until browned about 5-7 minutes.
- In a separate pot, bring 1 cup of water and a pinch of salt to a boil. Add 1 cup of rice, reduce the heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
- Once the pork is browned, add the ginger, garlic, and onions to the pan, and sauté for 1-2 minutes until fragrant.

- Add bell peppers, pineapple cubes, and carrots to the pan, and cook for 5 minutes until the vegetables are tender-crisp.
