Butternut squash tastes absolutely delicious when roasted. It’s tender, caramelized, and you’ll catch yourself nibbling cubes of it straight off of the pan with alarming speed.  Butternut squash is also ultra good for you.
Like most vegetables, butternut squash is low in calories and high in vitamins and nutrients. Butternut squash is rich in vitamin A, vitamin C, magnesium, and potassium. The antioxidants in butternut squash can even aid in fighting off diseases.
