Ruby chocolate is marketed as the 4th type of chocolate. It is a cocoa derived material from
unfermented cocoa beans (or beans fermented for no more than 3 days) that become red or purple
after treating them with citric acid.
Not classed as vegan, since it contains milk powder.
Gluten-free.
Taste: Berry-like flavor with a slightly tart after-tone.
Origin: West Africa/Latin America.
