4 large medium to large bell peppers (red and yellow), thinly sliced
6 large tomatoes, blanched and skin removed, smashed
1 bunch dhania (coriander), chopped for garnish
Sirimon feta cheese, for topping
Eggs (as many as desired)
2 large onions, finely chopped
Cumin powder, 1 tablespoon
Sweet smoked paprika, 1 tablespoon
Salt, to taste
Pepper, to taste
2 cloves of garlic, roughly chopped
Directions
- Preheat the oven to 180 degrees Celsius.
- In a preheated pan, add oil and sauté chopped onions and garlic until softened and slightly browned.
- While the onions are cooking, thinly slice the bell peppers, and prepare the tomatoes by blanching, removing the skin, and smashing them.
- Once onions are browned, add sliced bell peppers, smoked paprika, cumin, salt, and pepper. Mix well.
- Add in the tomatoes, stirring to combine. Let it simmer covered for about 15 minutes.
- Check the shakshuka after 15 minutes; the sauce should have thickened. Create wells in the mixture for the eggs.
- Crack each egg into a bowl, then gently pour the egg whites followed by the egg yolks into the wells.
- Season the eggs with black pepper and salt.
- Turn the heat to low, cover the pan, and transfer it to the preheated oven. Bake for 5-10 minutes or until the eggs are cooked to your liking.
- Once done, remove from the oven and garnish with chopped dhania, and Sirimon feta cheese, serve and enjoy!
