INGREDIENTS

  • 4 large medium to large bell peppers (red and yellow), thinly sliced

  • 6 large tomatoes, blanched and skin removed, smashed

  • 1 bunch dhania (coriander), chopped for garnish

  • Sirimon feta cheese, for topping

  • Eggs (as many as desired)

  • 2 large onions, finely chopped

  • Cumin powder, 1 tablespoon

  • Sweet smoked paprika, 1 tablespoon

  • Salt, to taste

  • Pepper, to taste

  • 2 cloves of garlic, roughly chopped

Directions

  • Preheat the oven to 180 degrees Celsius.
  • In a preheated pan, add oil and sauté chopped onions and garlic until softened and slightly browned.
  • While the onions are cooking, thinly slice the bell peppers, and prepare the tomatoes by blanching, removing the skin, and smashing them.
  • Once onions are browned, add sliced bell peppers, smoked paprika, cumin, salt, and pepper. Mix well.
  • Add in the tomatoes, stirring to combine. Let it simmer covered for about 15 minutes.
  • Check the shakshuka after 15 minutes; the sauce should have thickened. Create wells in the mixture for the eggs.
  • Crack each egg into a bowl, then gently pour the egg whites followed by the egg yolks into the wells.
  • Season the eggs with black pepper and salt.
  • Turn the heat to low, cover the pan, and transfer it to the preheated oven. Bake for 5-10 minutes or until the eggs are cooked to your liking.
  • Once done, remove from the oven and garnish with chopped dhania, and Sirimon feta cheese, serve and enjoy!
