Use the veggies from your Freshly box for the ultimate results!
1 handful of washed and dried baby leaf spinach
50g of fresh washed and dried basil
4 cloves garlic
fresh lemon juice
50g parmesan cheese
Handful of pine nuts (if you can’t find, substitute with cashews, walnuts or macadamia nuts)
In a pan on stovetop roast pine nuts on low heat until golden brown for about 5 minutes. Remove, set aside and roast 4 cloves peeled garlic until golden brown. In a food processor add spinach, basil, garlic, pine nuts, fresh pepper, salt, lemon, olive oil and parmesan cheese. Blend until desired consistency is achieved.
Use in pasta, salads, seafood or as a snack on crackers with Freshly’s cherry tomato’s and some more cheese!
