minutesThis super healthy bowl of rainbow veg + quinoa is a fast track to feeling great! The vegetables 🥒 can be swapped for almost anything – and because most ingredients are raw, it’s super easy to prepare. Sweet potato 🍠 , butternut, beetroot, or other greens would go wonderfully in this recipe. You can also add tofu or tempeh if you like.
Ingredients
1/3 cup quinoa
½ a cucumber, or 1 head of broccoli, steamed
A handful of sugar snaps, sliced
1 cup shredded purple cabbage
1 avocado
1 cup cherry tomatoes
2 teaspoons sesame seeds
1/4 cup Lemon Tahini Dressing
- For the Lemon Tahini Dressing
1/4 cup tahini
1/3 cup water
1 lemon juiced
1 garlic clove minced
1/4 teaspoon salt
1/8 teaspoon pepper
Directions
- Place the quinoa in a small saucepan with ¾ cup of cold water, and bring to the boil. Cover and reduce the heat, and allow to simmer for 15 minutes. If it becomes dry add a splash more water and cover, until all the seeds have ‘opened up’ and it is cooked. Set aside.
- Cut the cucumber into thin slices.
- Into two bowls, divide the quinoa. Then divide the cucumber, cabbage, avocado, tomatoes, and sesame seeds, and drizzle over the Lemon Tahini Dressing.
- Serve immediately, or cover and store for later. This Vegan Bowl is wonderful served either hot or cold.
