120g unsalted Brown’s butter
3 Eggs
150g lemon juice
60g lemon zest
240g sugar
500g Brown’s cream cheese
1 Egg
200g lemon curd
200g Brown’s mascarpone
140g sugar
200g The Cracker Shack Safari Cookies
80g unsalted Brown’s butter
Directions
- Lemon curd preparation: Blend lemon zest and sugar at high speed for 20seconds. In a saucepan put eggs, butter, lemon juice and cook for 20min at medium heat stirring continuously till thick.
- Cheesecake filling preparation:In a mixer, pulse cream cheese till smooth. Add mascarpone and pulse for 10sec at medium speed then add sugar, eggs and lemon curd and mix till sugar dissolves.
- Cheesecake base preparation: Crush animal crackers until smooth then add melted butter and mix thoroughly. Press down the mixture into a cake pan and allow to rest in a freezer for at least 10min.
- Cheesecake assembly: Pre-heat oven to a temperature of 180°C. Add the lemon filling into the cheese cake base.
- Place the cheese cake pan into a larger baking dish and add 2 inches of hot water so the cheesecake is surrounded by water.
- Cover top of the cake with foil leaving a small opening, to prevent the cheese cake from scorching then Cook bake at 180°C for 45min.
- After 45mins, lower the temperature to 140°C and bake uncovered for about 20min.
- Remove from oven and allow to cool overnight. Decorate with piped cream if you wish, and some lemon zest.
