1Kg Nyandarua potatoes
1tsp of salt
1tbsp minced rosemary
1tsp garlic powder

Directions
- Start by preparing the periperi chicken. Remove the chicken from its packaging and dry it with paper towels. Place the whole chicken breast side up on a cutting board, then generously rub the periperi marinade all over the chicken.Â
- Ensure the marinade penetrates into the scores you make on the chicken for maximum flavor. Sprinkle some salt on both sides of the chicken to enhance the taste. Allow the chicken to marinate in a bowl for at least 2 to 12 hours, refrigerated, to let the flavors infuse.
- Meanwhile, let’s prepare the potatoes to serve as the perfect side dish. Peel the potatoes and cut them into 1 cm thick logs. In a deep pan or fryer, heat cooking oil to 170 degrees Celsius (338 degrees Fahrenheit). Fry the potato logs until they are partially cooked and golden brown.Â
- Remove the fries from the oil and let them cool for about 10 minutes. Next, heat the oil to 190 degrees Celsius (374 degrees Fahrenheit) and fry the potatoes again until they turn perfectly crispy and golden. To add a burst of flavor, toss the fried potatoes with salt, garlic powder, onion powder, paprika, and a touch of freshly minced rosemary.
- Now, it’s time to cook the periperi chicken. Preheat your grill or oven to high heat. Cook the marinated chicken until it reaches an internal temperature of 75 degrees Celsius (167 degrees Fahrenheit). This should take around 45 minutes, depending on the size of the chicken. While cooking, baste the chicken occasionally with more of the periperi marinade to enhance its taste and keep it moist.
- Once the periperi chicken is fully cooked, let it rest for a few minutes on a cutting board. Then, slice the chicken into portions and arrange it on a serving platter. Place your fries alongside the chicken for a satisfying and flavorful meal.
