This red ruby coloured wine offers aromas of black cherries and diversity in spices. Also, a delicate touch of green pepper. On the mouth, the presence of ripe tannins can be enjoyed with red meats and cheeses
Wine making process: Hand harvested, de-stemmed and crushed. Short overpump and daily delestage. Fermentation between 22°C and 27°C for 10 days. Devatting and pneumatic pressing. Ageing of 40% of the wine in new American oak barrels for 4 months. Auto-clarification. Filtration. Bottling.
Pair with: Serve with beef broth and ripe cheeses.
Drinking Temperature: Best served between 15ºC – 17°C.
