Mazza peeled Tomatoes are meaty and consistent, only the ripest tomatoes become stewed tomatoes so there are no yellow or green parts. The stewed tomatoes can be cooked at high temperatures and for long periods and are perfect for typical Italian sauces like an amatriciana or bolognese sauce where the tomato has to be visible and well-defined.
