2 steaks of choice
1 red onion, finely diced
2 garlic cloves, minced
2 tbsp green peppercorns
1 tbsp apple cider vinegar
40 ml brandy (or cognac)
150 ml cooking cream
Rosemary (or thyme)
Butter
Salt and pepper to taste
Directions
- Cook steaks to your desired doneness and set aside to rest.
- In the same pan, using the steak juices, sauté finely diced red onions until soft.
- Stir in rosemary (or thyme), a knob of butter, and minced garlic. Mix well.
- Add green peppercorns, cider vinegar, and brandy. Let it simmer for about 1 minute, allowing the flavors to meld. Reduce the sauce by half.
- Turn the heat to very low and gradually stir in the cooking cream. Simmer for an additional 2 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Spoon the luscious Green Peppercorn Sauce over the succulent steak bites or slices.
